What are the differences between and english and french dovetail?
Both techniques join pieces of wood to form a drawer.  

English dovetail
Uses triangluer jigsaw cut wood that fits together tightly.  The triangular cuts help the drawers stay together under strain as the dovetailing is pulled into the increasing width of the dovetailing.  

French dovetail
This technique has a slat cut into the wood and the corresponed piece is slide into the the slat to join the pieces of wood.  The slat is cut in a triangular shape as is the corresponding piece.  The triangular shape of the slat cut helps the drawers stay together under strain as the dovetailing is pulled into the narrowing cut of the slat.

Either construction is a durable improvement over stapled or glued options.
